Autumn Newsletter 2023

November, 2023

Dear Friend:

We just enjoyed a gloriously warm and sunny weekend.

I planted garlic and mulched our garden with mounds of straw in preparation for winter. The gardening season is over. The days are getting shorter and darker.

As the cold of winter looms, this is a difficult time of transition for many of us. And conditions here at home and around the world are worrisome and indeed frightening. The stress can be overwhelming.

Acupuncture is an effective balm when the world is feeling so unbalanced. A treatment can reveal a fresh perspective to make our small corner of the world brighter. Acupuncture can also boost our immune system.

Come in for a Fall tune-up before the cold and flu season is upon us. Feel stronger and calmer as we go into winter.

Warm greetings,
Margaret

As many of you know, cooking is one of my favorite pastimes. I find it relaxing and soothing. I am sharing a favorite Fall soup recipe with you that is nourishing, warming and filling.

Hearty Beet Borscht

2 tablespoons olive oil
2 onions diced
2 cloves garlic minced
2 pounds beef stew meat
2 quarts beef broth, homemade if possible
1 bay leaf
6 red beets peeled and diced
1 small red cabbage thinly sliced
10 carrots, cut in rounds
2 tablespoons fresh chopped dill

Juice of 3 lemons
1 teaspoon lemon zest
salt & black pepper to taste
sour cream optional, for serving

Saute onions and garlic in olive oil in a large soup pan. Add beef stew meat and brown. Pour in broth. Add bay leaf and vegetables. Bring to boil, then simmer for 2 hours. Turn off heat and add lemon, zest, dill and salt and pepper. When serving put a dollop of sour cream on each bowl.

"Geese appear high over us, pass, and the sky closes. Abandon, as in love or sleep, holds them to their way, clear in the ancient faith: what we need is here. And we pray, not for new earth or heaven, but to be quiet in heart, and in eye, clear. What we need is here."
